“Boerenkaas” is a registered speciality cheese made
from unheated milk on dairy farms. In summertime when cows are out to pasture,
the cheese is softer and has a milder taste compared to cheese produced in winter.
The fatty acid pattern of the cheese in summertime contains less saturated fat
and more omega 3 fatty acids, resulting in a better taste and a healthier composition.
Hemke Nutri Consult is managing a project aiming to produce cheese in winter that is as tasty and healthy as in summertime, by adapting the feed.
New “Boerenkaas” is carefully evaluated for taste.
